The mature beans are harvested. The beans are then submerged in water to remove those that float. Next, they are fermented in bags for 36 hours. Afterwards, they are pulped by machine and left to ferment for another 36 hours submerged in mucilage that has been previously prepared with an earlier batch and fed with panela for one month.
After 36 hours, they are rinsed twice, and then a thermal shock is performed with 60-degree water once. Finally, they are dried in dehumidifiers that bring the coffee to its optimal humidity in 5 days.
